Easy, Quick, and Tasty Vegetable Beef Soup

Description

This makes a big batch of hearty soup. It is so easy even a man could do it.

Ingredients

  • 1 lb ground beef or stew beef
  • 1 cn tomato juice
  • 4 cn vegetables
  • 2 bay leaves
  • ds salt and pepper
  • ds chili powder

Instructions

In a skillet, brown the beef. Meanwhile, get out your crock-pot and drain and dump the vegetables in. I usually do it on low, but if you're in a hurry (and this is a dish that can be hurried), do it on high, or in a large pot of the stove. I usually use a can of diced tomatoes, green peas, corn, green beans, carrots, and diced potatoes, but you can use whatever veggies you like. If you use frozen, allow enough time for them to thaw and warm; if you use fresh veggies, allow for cooking time. I use canned veggies because they are already cooked and this dish can be done (and eaten) in less than an hour.


Throw in the bay leaves, beef and juice. Salt and pepper to taste; use chili powder if you like. Serve with corn muffins.

Notes

This will feed an army – or just a few for days. It will be a big hit – especially on cold days.
